Our à la carte menu — pick your own meats and sides in the quantities we have available — is preorder only. It is the surest way to get exactly what you are craving.
- Order by 3:00 PM the day before pickup. That deadline gives us time to shop and get the big cuts on the smoker.
- Thursday, 11:00 AM – 3:00 PM: Cubans and Brisket Cuban, with Smoked Gouda Mac & Cheese and Cowboy Baked Beans as our staple sides.
- Friday & Saturday, 11:00 AM – 3:00 PM: BBQ.

Path 2: Walk In on Friday or Saturday (The Walk-In Sampler)
Did not know about the preorder, or life got busy? It happens. On Friday and Saturday, walk-in guests can grab a Walk-In Sampler while it is available. It is our way of taking care of folks who did not order ahead — no preorder required, just come on in during restaurant hours.
The smaller sampler (feeds about 2–3)
Great for a couple, a small lunch, or one very hungry barbecue lover. If you clean the whole thing, we respect it. If you end up with leftovers, well — cold brisket for breakfast is not the worst way to start a morning.
The larger sampler (feeds about 5–6)
Built for families and small groups. Little ones tend to make a beeline for the brisket and the Smoked Gouda Mac & Cheese, and honestly, we get it. It is an easy way to let everyone try a bit of everything.
One honest note: quantities are limited and availability can end early. We cannot promise a sampler will be on hand every day or that there will be leftovers — when it is gone, it is gone. If you want a sure thing, preordering is still your best bet.
